Peanut Butter Cookies

These melt-in-your-mouth protein rich cookies are a delicious anytime snack. They are super simple and easy to make, and can be stored in an airtight container for quite a while.

Ingredients

1/2 cup (1 stick) butter, softened

3/4 cup loose peanut butter spread

1/4 cup granulated sugar

1/2 cup brown sugar

1 egg, room temperature

1 tsp. vanilla extract

1 1/2 cups all-purpose flour

3/4 tsp. baking powder

1/2 tsp. salt

Instructions

1) First, combine your butter and peanut butter in the bowl of your stand mixer. This recipe can also be done easily with a hand mixer and a bowl.

2) Beat on medium speed until this mixture gets lighter in color. This should take about three minutes. Once that happens, scrape the bowl down.

​

3) Then, add your two types of sugar. Mix to combine. Next, add your egg and vanilla extract.

​

4) Now, sift your dry ingredients. Make sure to add the salt after sifting. Then whisk to combine.

​

5) Add your dry ingredients to your wet mixture in three batches so that flour doesn't fly everywhere.

 

6) Once your flour is all mixed in, scrape the bowl down. Then, scoop out balls of the dough and roll it into a sphere with your palms. 

​

7) Place them onto a sheet pan lined with parchment paper. Make sure to place them at least 2 1/2 inches apart. 

​

8) Once the cookies are on the sheet, use a fork to create the classic peanut butter cookie pattern. Press down, slide out, repeat.

​

9) After all of the cookies are pressed down, bake them at 375° F (190° C) for 12-15 minutes.

Important Tips to Remember

Make sure your butter is room temperature before you beat it with the peanut butter. If you don't, it won't combine well with the peanut butter. 

​

Make sure your egg is room temperature before adding it to your dough. Colder eggs don't mix in as well as room temperature eggs.

​

When placing the dough on the pan, make sure they're at least 2 1/2 inches apart, or they will stick together in the oven.

​

Tip: When these come out of the oven, they will be fairly soft. Don't let them trick you into burning them. They will set over time.
