Tender Banana Cake Recipe

This banana cake recipe will be the best you've ever made, with it's tender crumb and spice enhanced flavor. It is very easy to follow, and you will never use another banana cake/bread recipe again! If you would like access to this recipe, keep scrolling!

Ingredients

1 1/2 cups all-purpose flour

1 1/2 cups whole wheat flour

1/2 tsp. salt

1 1/2 tsp. baking soda

1 1/2 tsp. baking powder

3-4 super ripe bananas

1 cup (8 oz) oil

1 tsp. vanilla extract

1/4 cup light brown sugar

1/2 cup granulated sugar

4 eggs, room temperature

1 tsp. cinnamon

1 tsp. nutmeg

Instructions

1) First, sift your flour, salt, and leavening agents into a large bowl. Then, whisk to combine.

 

2) Next, combine your mashed bananas, oil, vanilla, and sugar in another bowl. Then mix.

3) Crack and separate your eggs. You can do this any way you want to, but I do it by cracking them in normally and then scooping the yolks out by  hand. 

​

4) Add your spices to the egg yolks and mix. Set this mixture aside. 

​

5) Whip your egg whites with either a hand or stand mixer. I'm using the former. Whip until you get soft peaks and set aside.

​

6) Next, add your dry ingredients to your wet mixture. It'll get pretty thick, but this is where we add the yolk mixture in. Your batter should be a bit more loose now.

7) Now, fold in your egg whites. Make sure you fold as opposed to whisking, because whisking would deflate all the air we whipped in.

​

8) Once all your egg is mixed in, the batter is ready. Pour it into any pan our dish you would like. Just make sure it isn't overfilled and that it is oiled for easy release.

​

9) Tap out the air bubbles. Here's your chance to sprinkle anything on, from raisins to almonds.

10) Bake at 350° F (180° C) for 35-45 minutes.

Important Tips To Remember

Use any flour you like. I chose to use both all purpose and whole wheat flour to make things healthier, but still tastier. Feel free to switch up the types, but make sure it amounts to 2 2/3 cups.

​

Don't get any egg yolks in your egg whites. Getting yolk in your whites will prevent the whites from whipping up.

​

If you choose to sprinkle something on the top of the cake before putting it in the oven, make sure you spread them out. Restricting the topping to one are can cause the cake to be weighed down or not even bake. 

​

Pro Tip: To make this a traditional banana bread recipe, skip the separation of the eggs and add it straight to the wet mixture.
