Ghanaian Pancake Recipe

This pancake recipe gives you the instructions to create perfectly soft, chewy, and crispy rolled pancakes. These traditional treats originate from the Republic of Ghana. So, these are not your average pancakes. Keep scrolling to find the recipe!

Ingredients

1 1/2 cups all-purpose flour

1/2 tsp. salt

2 tsp. grated nutmeg

2 eggs

1/2 cup melted butter

1/2 cup water

1/2 cup sugar

1 can (14 oz) evaporated milk

Oil

Instructions

1) First, sift your flour into a large bowl. Next, add your nutmeg and salt and whisk to combine.

2) Pour the eggs, butter, water, and sugar into another bowl. Mix to create a homogeneous mixture.

​

3) Add your dry mixture to your wet mixture and mix. You don't have to mix all the way, because we still have to mix in our evaporated milk. 

​

4) Add your milk in rounds so that the batter can absorb all of that liquid. 

​

5) When you have mixed in all of the milk, your batter should be fairly runny. Don't add flour, because it is perfect. 

​

6) Turn a burner onto medium heat. Pour about a tablespoon of oil to start. After a few seconds, pick up and rotate the pan so that the oil spreads. 

​

7) Then, use a ladle to scoop about 1/4-1/2 of a cup of the batter onto the pan. Rotate it again so that the batter spreads.

​

8) After the pancake starts to look less liquid in the center, you can flip. Flipping this sort of pancake takes a bit of practice, but you'll get there.

​

9) Once the other side is cooked, it's time to roll. I like to flip it over so that the more attractive side is facing down. Then, use the spatula to fold the pancake on top of itself.

​

10) Just make sure to press down after each roll, or the pancake will unravel. Transfer to a plate and continue until all the batter is gone.

Important Tips To Remember

Make sure that you don't sift your nutmeg. Grated nutmeg is in larger pieces, so the sieve will catch the nutmeg when we want it in the batter. 

​

Be sure to use evaporated milk as opposed to whole milk. This is because whole milk will not provide as much chewiness and flavor to these pancakes.

​

Find the right temperature. These pancakes need the perfect amount of heat to cook well. Keeping the heat too low won't give you the crispy edges and caramelized color. Keeping the heat too high will make the pancakes crispy everywhere, and then you won't get the perfect blend of textures that make them so good.
